1 16-ounce can of Mushrooms
1 Stick of Butter
2 T Minced Garlic
1 Bulb of fresh Garlic
1 T Worcestershire Sauce
1 4-lb. beef roast
Directions
- Preheat the oven to 425.
- Using a chopper or blender, mince the mushrooms almost into a paste.
- In a bowl, combine mushrooms, a stick of butter, minced garlic, and Worcestershire. Beat them together into a uniform paste.
- Peal and put aside cloves from garlic bulbs.
- Using a knife, stab the roast in a grid pattern about every inch and insert a clove or slice of clove into each stab hole.
- Score the top of the roast with a knife and coat the entire roast with the mushroom/butter mixture.
- Place the roast in a 425-degree oven for 10 minutes, then reduce the oven temperature to 350 degrees until the inside of the roast is 130 degrees on a meat thermometer (about one hour).
